Cottage Cheese Pancakes (High In Protein)

These cottage cheese pancakes are a great addition to any healthy breakfast.

Ingredients
  

  • 1 Cup cottage cheese
  • 2 Eggs
  • 2 tbsp agave syrup or raw honey
  • 1 tsp vanilla extract
  • ¾ cups flour
  • ¼ tsp cinnamon
  • 1 ½ tsp Baking powder
  • 1 Pinch salt
  • 2 tbsp butter

Method
 

  1. To a blender or food processor, add cottage cheese, eggs, agave syrup or Honey, and vanilla extract. Blend until smooth.
  2. In a bowl, add the flour, cinnamon, baking powder and salt. Whisk to combine then pour the wet batter into the bowl. Mix until just combined.
  3. Add 1 tbsp of butter to a nonstick skillet over medium heat and allow to melt. Once hot, use ¼ cup measuring cup to portion out the pancake batter. Carefully pour it onto the prepared skillet. 
  4. Cook for 3-5 minutes until bubbles start appearing on the surface of the pancakes. (Keep track sometime bubbles don’t appear) Flip and cook for 1-2 minutes. 
  5. Repeat until all the batter is gone. Serve warm with butter, fruit of choice, and raw honey.
